My Healthy and Easy Banana Bread Recipe

While I try to maintain a healthy, well-balanced diet all year round, sometimes a craving strikes and it is just too hard to ignore! Once everyone started making banana bread in quarantine, I knew I had to make some with my own healthy spin on it. This recipe seriously tastes so good and there’s just a few ingredients! Leading up to my Sports Illustrated Swim shoot, I would eat this banana bread as a dessert after dinner and it seriously just hit the spot. Now, I crave it for dessert all the time! So today, I decided to share my model approved banana bread recipe with you all so you too can give into your sweet tooth without any guilt!
Ingredients:
3 medium ripe bananas
2 cups old-fashioned rolled oats
2 large eggs
1/4 cup pure maple syrup (or honey)
1 teaspoon baking soda
1 cup of blueberries
1 cup of crushed walnuts
Instructions:
Preheat the oven to 350°F. Lightly grease a 9×5-inch loaf pan with non-stick cooking spray and set aside. Add all ingredients into a blender and blend until smooth and well combined. Pour the batter into the prepared loaf pan. (Garnish the top of the batter with thinly sliced banana, if desired.) Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Take the loaf out of the oven and let it cool completely in the loaf pan. Store the bread in an airtight container on the counter for 2-3 days or in the refrigerator for up to a week. Enjoy!
