My Favorite Almond Butter Cookies
7.21.20
I have to confess; I have SUCH a sweet tooth! And anything with chocolate in it seems to be my vice. But in an effort to try and eat healthy, I decided to come up with a cookie recipe that tastes like it’s bad for you but isn’t! This recipe is my absolute favorite cookie recipe, and I literally eat them every single day. Even my husband is so obsessed with them that I put these cookies in my wedding vows! They are so tasty, grain and flour free, and only takes me about 15 minutes to make! I love these cookies so much, which is why I decided to share with you how to make them so you too can become obsessed!
Ingredients:
1 cup all natural creamy or chunky almond butter (use your favorite brand)
1 cup unsweetened coconut flakes
1/3 cup maple syrup
1 egg
1 teaspoon pure vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 bar dark chocolate bar chopped
Sea salt
Instructions:
Preheat the oven to 350 degrees. Combine all of the ingredients EXCEPT for the sea salt into a mixing bowl. Stir everything with a large spoon until smooth. Using a non-stick sheet pan, spoon out a little more than a tablespoon of the mixture onto the pan and shape into circles. Once all of the cookies are on the sheet pan, sprinkle some sea salt onto each cookie. Then, place the cookies in the oven and bake for 10 minutes. Enjoy!
